1. Cacio e Pepe
New Zealand chef Josh Emett’s favourite pasta dish is the Cacio e Pepe, and all you need to recreate this dish all you need is the 3 main ingredients - grated pecorino, and crushed black pepper and grated parmesan. He also recommends adding a little butter to make your pasta extra creamy.

2. Carbonara
Josh Emett has said that the Carbonara is something that everyone should learn how to make. This recipe can be whipped up very quickly and is affordable as well. Josh Emett advice to combine the eggs and cheese to make your silky sauce, then toss in your pasta. Emett notes that it's important to work quickly with your pasta once it's in the mixture so that it can retain enough heat to cook the eggs without scrambling them.
3. Classic Spaghetti Bolognese
Nothing is more satisfying than a good bowl of spag bowl. Chef Paul Liebrandt said that the key to a rich delicious bolognese sauce is patience and slow cooking. He said “It's something you make today for tomorrow, something that can develop and mature with flavour. When you eat it, you taste the time and the effort that went into it."

Chef Alex Hong loves a good vegetarian lasagne because of how versatile it is. He recommends using a bechamel sauce because it keeps the lasagne really moist, and you get that cheesy gooey-ness that you want in a lasagna.
